Just got nice big tubs of lard & duck fat from a butcher. I know duck fat makes excellent roast potatoes, and thought I might also try making some sweet potato fries, but otherwise I'm a newbie when it comes to these fats.
Also curious if anyone has ever ordered lard from Wellness Meats, and if so was it good? It's much cheaper than what I paid.

When I procuse fat from ducks/pork that I've been roasted (realt treat really...), I use it whereever it seems like it would go well.
Stuff that does seem to (ie I like it!) is wilted greens in duck fat - put lid on and add a bit of water to steam. Or lard with cauliflower and onions, roasted (really I like cauliflower with anything...), mushrooms could be added to either of these types of things (criminies etc will soak up the goodness. Things like kohlrabi also nice. If you're really keen and have a ton of fat, get some dried shiitake mushrooms and roast underneath for a while on medium heat- they will crisp up and be rather nice...

I made scrambled eggs with rendered duck fat a while back and they were luscious. Try either of the fats with roasted or sauteed veggies or meats.
I've never ordered either of those from Wellness. I just use up the small amounts of fat I produce in my own cooking, so I can't voice an opinion on those one way or the other.
