Do I really need to peel 'em?

So, if I buy organic vegetables, is there really a need to peel them? After looking through Well Feed and seeing a roasted carrot recipe that said something about peeling them it got me thinking, does it really matter? I'm not super lazy, but it just seems kind of pointless? Yes? Or no? What's the deal?

I forgot to add that if there are questionable spots or other "blemishes" obviously I cut them off.

I never peel carrots, and sometimes wash them, sometimes don't. I feel we are to sanitized in society and that leads to weakened immune systems. I haven't been sick in years. My brother's family uses purell all the time, wash everything carefully, and are always sick.

I only peel carrots when I cannot scrub the dirt out of all the nooks and crannies.

Humans are not the only beings that create pesticides :-). If plants created them where would you expect them. Ofcourse eating the skins sometimes will only be good due to hormetic effect. If the carrots are not washed properly that will also provide you with some useful bacteria, and increase immunity. Just don't do it all the time.

Technically, your upping your risk of catching listeria. But proved your immune system is on good form that's not too big a deal.

I buy conventional carrots, and no I dont peel them. I just wash it. I also don't peel ginger lol.

Nope, you do not need to peel them. I don't, although I do rinse them. The peel/skin often has a lot of nutrients. This applies to carrots and other veggies too (eggplant, squash, zucchini).
