I will be a sophomore in college, leaving for school in just under two weeks. I'm looking for the best, easy-to-make Paleo dinner recipes. I follow a slightly stricter version of Paleo with the following restrictions:
-No shellfish except lobster & scallops
-No black olives, brussel sprouts, cabbage, cauliflower, cucumber, eggplant, white mushrooms, white potatoes or iceberg lettuce
-No cashews, peanuts, pistachios... Other nuts in small quantities
-No kiwis, oranges, strawberries, tangerines, cantaloupe, honeydew or dried fruits
-No dairy except butter
I do eat brown rice with dinner occasionally, I love coconut, and I try to eat as little chicken and as much fish/red meat as possible.
I will have a crockpot, an oven, a stove, and a microwave. I'm open to suggestions on any appliances to buy.
I've suffered autoimmune problems in the past and am currently dealing with low estrogen that is causing irregular periods and difficulty with weight (am at 30% BF, trying to lose 20 lbs), amongst other smaller issues. I'm under the care of a nutritionist and an acupuncturist. Because of my autoimmune past, I really can't eat any funky oils so I'll be cooking all of my meals. My weight struggles seem to be caused more by my hormones than by my food intake (VLC and calorie counting had no results) so I'm really just focusing now on regulating my hormones and being healthy. I'm also taking supplements as per my nutritionist's recommendations.
I'm just really looking for recipes that will make following these rules as easy as possible. I'm not on a set budget but I don't need to be spending a ton, either. I'm also happy to devote time to cooking, but don't want to spend several hours per day in the kitchen. Any ideas, advice and recipes are appreciated!!
