Young Coconut Meat

This might seem like an odd question but I hope that someone can help me with it.

I use some raw recipes as an addition to my paleo lifestyle [I find that some sauces are great since I don't eat dairy]. I've been reading this raw book that uses young coconut meat in many recipes for sauces and desserts. I can't get a hold of them where I live and I'm wondering if there's something that can replace the coconut meat in these dishes, mostly the sauces. It doesn't have to be raw or anything, just have the same consistency as the coconut meat and be paleo friendly.

Any ideas?

Both of those links looked like they have added sugar, unfortunately.

If you don't live in the Tropics you probably will not find young coconut flesh. What is sold in the stores in the US is mature coconut meat. The liquid from young and mature coconuts have different characteristics. The young coconut meat is thin and soft. BobinPanama

Where do you live? Most Whole Foods, Fresh Markets, Trader Joe's & wellness foods type markets have these coconuts shaved down, where you extract the coconut meat from them, yourself. I have even seen them in all of our regular grocery stores in the produce section.
