Hi there, I am wishing to make home-made coconut milk on a regular basis as the 1lt carton variety (beverage version) tends to have other things added to it and is quite pricey. My sister and I made our own coconut milk by putting 1 cup of grated coconut milk (packet version) with 4 cups boiling water in a blender and then put the contents through the cheesecloth. The coconut milk tasted fantastic and was great viscosity. However, it only lasted a day in the fridge - the next day it went hard and gluggy. We have read on the internet that the home-made stuff can last 4-5 days in the fridge. We are wondering if any of you guys have had this problem with it going gluggy, and/or if you have any suggestions for how to stop this from happening??
