I've started buying fresh coconuts (mature ones, in the brown shell). It makes for a great snack to nibble on, but how healthy is it?

Yes very healthy. A rich source of quality saturated fats. Great source of fiber. Potassium in abundance. A bit of sugars. A hint of protein.
If you enjoy coconut, eat it with the same confidence that you would eat that other great source of vegetable fats: avocado.
