How come my coconut kefir yoghurt doesn't thicken?

I tried making my own kefir coconut yoghurt using the body ecology starter and following the instructions that came with it but the yoghurt just doesn't get thick enough. Any suggestions from people that have done this before.

I'm just using coconut milk and the body ecology starter. I added sugar and let the starter sit for 20 minutes then I heated the coconut milk to 32 degrees and added it to the jar of starter and left it for 24 hours by the window. Are there further steps I should be taking or extra ingredients that need to be added to the mix. Right now it's just kefir milk and it tastes incredibly sour so I think letting it ferment for longer will only make it more sour and less appetising.

Would love some advise from people that have done it successfully themselves! I'm thinking I might be better off just using regular milk.. but the coconut version sounded yummy!

My homemade yoghurt is never as thick as the store bought. Gelatin works to thicken it, just make sure you buy quality gelatin. Let it sit in the coconut water to bloom, then heat.
