Differences in coconut milk?

Whats are the differences between the coconut milks? I've been using the canned coconut milk, but I have also seen coconut milk in cartons in the refrigerated section and also in the middle of the store on the shelf. So whats the difference?

Hmmm so seems like it's actually not a problem if your body can tolerate. I had just read some bad things about it but thanks for making me take a more in-depth look! do you know of any issues/problems caused by guar gum, i had a quick look which didn't turn up much, except for some contamination in 2007 http://en.wikipedia.org/wiki/Guar_gum#Dioxin_contamination . My favourite coconut cream actually contains "less than 0.5%" organic guar gum, i've tried others without gums, but keep coming back to this one. I do avoid ones that contain Carrageenan, another gum, i have seen more negative info on that one http://en.wikipedia.org/wiki/Carrageenan#Health_concerns

Read the ingredients and the labels. The canned kind is more for cooking and has a higher percentage of fat. The carton kind is more for coffee or drinking.

Watch out for Guar Gum in the ingredients of the carton kind...

In my opinion, the canned is better. For coffee or cooking. It has more flavour and a richer taste. The carton stuff always seems watered down,

Even better is coconut cream.
