Cooking/stir frying with coconut oil

I am very slow to change, but I bought a jar of raw coconut butter today. Now what do I do with it (it's a pretty jar and would not look bad sitting on the shelf above the sink forever). This has got to be the fifth jar I have gotten over the years and I am determined to use it. So, I was thinking about making some veggies. Do I use it just like butter or olive oil?

I have a odd feeling it would be great with bananas, blended in a smoothie, maybe with a tiny pinch of real cinnamon (not the gross cinnamon at the grocery store)

Wow I am really having a senior day. All day I have been saying stupid things. This is coconut butter. Looks like I will be going back to the HF store for coconut oil. Does anyone have a favorite brand? Looks like that pretty jar may be sitting on the shelf for a while!

Yeah, think of coconut butter as an analogue to nut butters, not to regular butter. It's not meant to be cooked with.

Is this coconut oil or coconut butter? You use both terms and they're actually two very different things.

Coconut oil: Yes, use just like butter or olive oil. It's a great fat for cooking and stir-frying.

Coconut butter: I wouldn't think of cooking with this. There's too much coconut in it and not enough oil, and it'd probably just burn and stick to the pan.

The coconut oil is solid (kind of waxy looking) in the jar. Just use a spoon to scrap some out into your pan. It melts once you heat it and looks just like any other oil you'd fry with - except it won't kill you like canola oil. ;)
