How can I de-carb coconut water?

As a lover of the subtle natural flavour and after-taste of pure coconut water, such as Vita Coco's, I'd like to find a way to remove or at least lessen the levels of sugars found in it so I can drink this more often for its nutritional benefits. I'd imagine some fermenter like yoghurt starter would do the trick. What would you paleo experts suggest?

Kombucha as less than 5% alcohol. More along the lines of yogurt, kefir and sauerkraut.

Yes, water kefir grains is what you are looking for, but of course it will change the flavor and be less sweet due to the fermentation.

Yes, water kefir grains is what you are looking for, but of course it will change the flavor and be less sweet due to the fermentation.

You can also buy Kevita coconut kombucha, which is made with coconut water, but it's pretty low-carb because it's fermented. I like it a lot.

Fermented, as in alcohol?

Alcohol causes insulin spike same as sugar, doesn't it?

I was wondering if I could ferment it with a kombucha mushroom. Did some web plowing earlier but have not found te answer yet.
