Coconut Oil Recipes

What are some of your favorite recipes using coconut oil? My wife is all about it lately, so I am trying to surprise her with some tasty coconut oil recipes this weekend. Much appreciated!

Sweet potatoes fried in coconut oil are really good, too.

Do you mean coconut flavored recipes? The refined coconut oil has no flavor. Unrefined has some flavor but not enough to stand out in most dishes. You could use coconut cream/milk or flaked coconut to add some flavor.

i just use coconut oil for cooking or smoothies. it's not the center of any dish. it's just like what i would use butter for or to add fat to smoothies.

Here's a recipe for basic chocolate that you can use as a base for everything. Alone, you can make "fudge" that you keep in the freezer, you can mix it with nuts and shredded coconut, drop it onto wax paper and freeze it for chocolate nut clusters. Or you can dip things in it and freeze them...endless possibilities!

Of course I just realized I ASSUMED you meant desserts...because thats how I eat mine!

I don't use it as the basis for food, meaning not having Coconut Oil recipes. I do like to fry potatoes in CO and curry powder, that would be my favorite. I also find that I can use a tiny amount to oil a pan compared to any other oil, it just seems to be the perfect pan lube.
