Coconut milk, kalamata olives, bacon grease as Go-to's

I am attempting my second Whole 30. Doing alright--I've been paleo/primal for over two months so this isn't brutal. I find myself having a few "go-to's" as foods to manage my way and am wondering if there are any potential pit falls.

Coconut milk in coffee? OK? What about a latte with coconut milk? Canned vs. carton?

Kalamata olives: I was making the Paleo Parents' version with walnuts and just either felt like I was gaining weight or feeling puffy (phytic acid?). So I changed it to Cucumbers with olives, often kalamata olives. Does one need to exercise a lot of restraint with the olives? Seems like the fermented aspect and high fat aspect should be a good thing?

I often use bacon grease to line the bottom of my pan when cooking eggs or veggies. Good? Bad?

On Whole 30 I made my own coconut milk because all the canned stuff has additives not permitted on Whole 30. It's not hard to do from flakes of coconut The boxed stuff has worse additives.
