Does anyone have any good coconut flour recipes?

I just purchased a bag of coconut flour on a whimm while looking around in a specialty food store. I love baking and really do miss it, so I'm very excited to experiement with it. What are your favorite recipes using coconut flour?

Coconut flour is VERY absorbent, so when adapting recipes, you need to use far less coconut flour than you would other flours.

You can pretty much modify any baking recipe to be paleo-friendly.

  • Regular flour = Coconut flour or almond flour.
  • Sugar = Raw Honey
  • Butter = Butter
  • Eggs = Eggs
  • Chocolate = Dark Chocolate (Personally I don't go under 85%)

I say paleo-friendly because it's not really paleo at all.. just healthier.

I made some darn good coconut macaroons with coconut flour. I found it just by googling and of course I can't find the exact one I used but the ingredients were approx..

one cup coconut flour one cup coconut tbl spoon raw honey handful of shredded almonds 2 eggs

I made an almond butter version of these too just by winging it with ingredients. Delish but not something I can do often because it throws me off track.

Try fat bread - seriously good, like brioche without the gluten.

That version doesn't list coconut flower, but I've used the flour with excellent results - you just need to balance the fat content [edit: you blend the flour with coconut oil]. Really tasty, and it doesn't go stale.

I don't do it anymore because a HFLC diet doesn't suit me. But if it suits you that is a great addition to your diet.

Coconut flour cake: ¾ cup butter or virgin coconut oil 1 cup sifted coconut flour ½ cup coconut cream/milk or whole milk 1 cup cocoa powder 12 eggs 2¼ cups Organic Raw Crystallised Coconut Nectar 1 teaspoon salt 1 teaspoon vanilla 1 teaspoon baking powder Marshmallow frosting

Melt butter in a saucepan over medium heat. Mix in cocoa powder. Remove from heat and set aside. In a bowl mix together eggs, coconut milk, nectar, salt and vanilla. Stir in cocoa mixture. Combine coconut flour with baking powder and whisk into batter until there are no lumps. Pour batter into greased pan. Bake at 175 Degree C (350F) for 35-40 minutes. there is a great book called Cooking with Coconut Flour by Bruce Fife ND. you can order it from Amazon.com It has many great recipes. I highly recommend it.
