AIP folks... what coconut products do you consume? oil, milk? :)
I am very new to the Paleo diet (only about two weeks) and wanted to know if coconut milk really does help you lose fat?!? I thought it was high in cholesterol and increases your LDL level! I am allergic to almonds so almond milk is out. Could... (more)
Cholesterol is only found in animals, not plants, so there is none in coconut. And dietary cholesterol does not raise cholesterol in the blood. Dietary cholesterol is actually very good to consume, especially for hormone function.
I am a type 2 diabetic, and I found that switching to Paleo over a year ago brought my blood sugar down from the 360~480 range to the low 200's. FANTASTIC, RIGHT? I've taken insulin before, but it caused a rapid, disgusting weight gain of 2.5... (more)

Can honestly say without feeling like I am over exaggerating that good quality MCT oil is quite possibly not just healthiest oil but one of the healthiest foods on this planet. MCT oil is generally concentrated coconut oil, it can also be made... (more)
How hard was it for grok to get into a coconut? Should we treat coconut meat/butter similar to that of other nuts? The challenge of harvesting the edible portion is so great but worth the nutritional density.
Shredded coconut, coconut flakes, dried coconut... Whatever you call it, I LOVE THE STUFF! Its the only way I consume coconut in my diet (no coconut milk, oil, flour) I crave it everyday, and have it by the spoon, but one spoon or two is never... (more)
It's possible that you aren't eating enough fat and your body is craving shredded coconut and nuts because they are primarily made up of fat. Try eating other fat sources but be generous with the serving - avocados, coconut oil, butter, olive... (more)

My homemade yoghurt is never as thick as the store bought. Gelatin works to thicken it, just make sure you buy quality gelatin. Let it sit in the coconut water to bloom, then heat.

Coconut cream has more coconut solids in it. It's delicious to eat on its own, but not right for cooking. It melts, but it will make everything taste much more like coconuts than oil will, and it will probably mess with the texture of whatever you... (more)
