xmas dish to pass

hi!

i am in need of a paleo dish to pass for my xmas party with my very non-paleo boyfriends family.  they will be serving all the traditional foods, so it has to be something that will compliment the meal but also serve as food i can eat while there (everything else is probably very very very non-paleo...think weight-watchers and vegetable-hating vegans ....)  thanks for your help!

What do you fix for vegetable hating vegans? Chip & dip?

Collard greens with bacon, roast brussel sprouts with bacon, cauliflower mash (similar to mashed potatoes) with garlic/bacon/chives/etc, and stuffed bell peppers with ground beef/lamb/turkey stuffing are a few options that come to mind which are delicious and everyone will like. If you don't have any ideas just remember, roasted _____ (fill-in-the-blank) with bacon is always a good idea :)

If you really want to kick ass though, you could make a standing rib roast, hell yeah!

Roasted brussels sprouts are delicious, very healthy, very Paleo, and even those with an otherwise bland palate often like them.  I render bacon in a large pan, roll the sprouts around in the bacon fat, then roast them until done, maybe add some nuts at the end.

Holiday meals are usually pretty Paleo if you allow yourself the white potatoes, more carbs than normal, and a little bit of sugar.  Shouldn't be hard to get some meat and veggies. Good luck!

thanks!!  just wondering, how do you take brussels as a dish to pash? ...are they okay to serve cold??  sorry im new to this!

They're best hot or room temp.  You can make them ahead and reheat them.  Have fun!
