Well recently I've added more carbs in my diet, from about 80g to about 100-150g, I feel less emotional and have a better temper, I also think my hair doesn't fall off so easily anymore ( unsure if this is linked to higher carb though) I am very curious about my heritage being the reason I go better with carbs.
I was born in Australia, but I was brought up on typical German/Yugoslavian/Romanian food. So potatoes, sausages, cabbage, etc ( ah nostalgia ). My heritage is Romanian, German and Macedonian. I've been skinny all my life, and my bmi is about 10-15% ( healthy range 5-85%).
When I was lower carb I felt great at first, but after a few months I started loosing my temper and getting more emotional swings. I initially went higher carb because school has started again so it's a bit more convenient to pack lunch, but I found it has made my mood better too!
Before paleo my cholesterol was absolutely perfect ( funny tough because i don't think my diet was that great before). And after paleo my cholesterol is a bit high, hdl at 100 and ldl at 150. ( I assume this is from grain fed animal fats and too much nuts, or is this a sign i should change something? ).
So, out of curiosity, what are your macronutrient ratios, especially regarding fat and carbohydrates.
What sort of carbs do you eat?
Were you lower carb before but moved higher? If so, why and how has it helped you?

I'm german (mother is swedish)
Never used the diet as a weightloss tool. jumped on it for challenge and health reasons.
I was VLC for a while but felt like crap after a few months. Now, I eat tons of starchy foods. mainly potatoes! I couldn't live without them. I think, every german is predestined to love poatoes haha. It might be interesting for you to mention that I feel like fat doesn't satiates me at all. Starch on the other hand is very filling.
Began to add in soaked/fermented buckwheat and oats. But it has not become a staple and I don't mean for it to become one.
Concerning the macronutrient ratios, I'm not quite sure. I definitely cut back on the fat a lot; I guess it comes naturally when you're upping starch/carbs. I don't watch it though! One day might be high fat and moderate starch and the other day vice versa. protein always stays around 25-30%.
Never eat any potatoes without fat (marrow butter, mmmhhh). that would be....just..wrong.

I'm mostly German, some Irish. I usually eat about 55-60% fat, 20-25% protein, and 20% carb. This is just how things end up when I don't measure anything or shoot for a particular macronutrient ratio. I do have some lingering gut issues, so I sometimes wonder if I'm having too much fat.
I eat 2 or 3 eggs most days for breakfast with either bacon, pot roast, or grassfed ground beef, plus a cup of coffee with coconut milk or heavy cream. Lunch is probably 6 or so oz of meat (chicken or beef mostly) and about a cup of cooked veggies or salad. Dinner is similar to lunch, and lately I've been having a PWO smoothie of kefir, pumpkin, egg white protein, and a little honey. I mainly cook with clarified butter, sometimes coconut oil. My carbs are mostly spaghetti squash, broccoli, brussels sprouts, some sweet potato & butternut squash, fruit a few times a week. And sometimes Reese's PB cups or ice cream :)

Oh, thank god I found this post. I started Paleo with hubby Dec 2011. I am Swedish, Scottish, polish, Dutch, and German. All babies born blonde, some of my siblings blue eyes, some brown. Fair skin. Hubby Lithuanian, and I swear they should DNA test that country because they are very beautiful people, but many ( DH included) have enormous heads and Cromagnon eyebrow bumps. I think they are closer to the caves than most! But still very very blonde, and blue-eyed. So I was very skeptical of the whole coconut oil thing. I can't eat it straight or putt in coffee. I mostly stare at it. But anyway, I started off VLC, and it was pretty good for a maybe 5 weeks, but I was so cranky from 10:30 am to 4:00 or so, and finally I started waking up at 2:30, or 4, every nite, wide awake, but not rested at all.....so I started adding a bit of carb at lunch - handful of sweet potato chips, or a slice of sourdough bread. Sooo much better!

I'm a lot less grumpy after re-introducing starches and cutting back on fats. I'm mostly French/Irish/Polish. I have TERRIBLE mood swings on low carb. It makes me crave sweets like crazy.
I wish I could eat dairy but it doesn't agree with me. It's hard to have a good potato without butter (I agree with Annamalia, it's just... wrong. haha)
Since I can't eat white potatoes the way I would like (with butter, sour cream, or cheese) I stick to sweet potatoes, which I can roast, cut into rounds, and lightly fry in coconut oil on each side with salt, pepper, and lemon juice squeezed over the top.

I'm a native German living in the US now. I'm female, 52, and paleo since late spring 2011.
I was then automatically very low carb because all grains and legumes were out and the seasonal veggies were all not very starchy. I lost a ton of weight which wasn't really necessary (except for the "wheat belly") and began to feel more and more nervous and as if I was on speed or other drug. When I started eating potatoes and tubers I immediately felt much, much better. I eat a lot of starchy vegetables now, I don't count my carbs. I usually see to it that any meal or snack has protein, fat, and carbs in it. And in weight the starchy veggie is usually more than the meat or egg.
I've been thinking along the same line as you. My heritage is Northern German and some French and Russian (but the large part is Northern German from the North Sea as well as Baltic and I am pale, freckled all over, light blue eyes, and reddish blond).
My diet now resembles pretty much a very traditional diet from that area: lots of fish, some meat, and mostly tubers and cabbages, little fruit when in season (berries and apple). Except I can't get hold of good fresh fish where I live now and so it's more meat than fish. Normally I would eat some fish every day. I don't like anything coconut and I can't handle it very well either (diarrhea) and so far I've only been confirmed on the paleolifestyle website that coconut is simply nowhere in my genetic heritage, which is most likely straight up from Africa to Northern Europe with a short stop in the Middle East. I meanwhile define Paleo for myself as going back to my own roots and eating what my ancestors have thrived on for thousands of years. And for example grains of any kind have not been cultivated that far north until 1000-2000 years ago. Even when I was growing up they had little part in the traditional diet. But roots and tubers always have. Oh yeah and I know that potatoes are not native to that part of the world but I seem to handle them well and they taste better than turnip and rutabaga but I also try to reintroduce more and more tubers into my diet to replace the potatoes.
