What to do with leftover marinade?

I have 300g of chicken hearts marinating, and was wondering what I could use the leftover marinade for?

I was planning to braise the chicken hearts, and simmer them in the marinade itself along with extra red wine and some stock. Many sites say don't use the leftover marinade, some say boiling for 1-2 mins is required - so perhaps simmering for 10 mins is not enough?

Any other ideas?

Here's the marinade, first time trying this one so can't vouch for it: - 30g balsamic vinegar - 100g red wine - 20g olive oil - 6 garlic cloves - rosemary, thyme, oregano, salt, pepper

Marinade was good - not phenomenal, but worked. Chicken hearts have such a strong taste it's probably tough to make a marinade which works well.

Why not boil the marinade for two minutes (or longer to thicken it a bit) before simmering the braised chicken hearts?

Sometimes I try to double-purpose marinades, seeing as there is usually a lot leftover. I usually heat it to a boil to try and kill any buggies from the previous meat, let it cool, then put it in a zip-lock bag with another meat. To be on the safe side, I usually throw the whole lot into the freezer. When you want to have that same flavour again from the marinade, just pull it out of the freezer and it will become really nice and flavourful as it defrosts.
