Been doing Paleo for a couple months. Yes, I cheated. Nevertheless, I ate grassfed beef bone broth almost daily, beef liver, beef heart, and other meat that was mostly grass fed. Here are my numbers:
19 - Iron % Saturation (low)
12 - Ferritan (low)
12.6 - Homocysteine (high)
12.5 - Hemoglobin (low)
36.8 - Hematocrit (high)
16.1 0 RDW (high)
Is this a sign of celiac? Is it a leaky gut? Why am I not absorbing the iron? Should I supplement with B6, B12, & Folate? What do you recommend? I'm obviously deficient, but I don't understand WHY! My biggest health challenge is my anxiety which I think is related to the above.
