I know that watermelon is higher in fructose -- could that be the reason why my stomach swells up like a balloon whenever I have any? Is it just the fructose that would cause that? I'm not eating an excessive amount or anything but man, I have an awful reaction.
Do I need to say goodbye to my beloved summer melon of choice?
Also has anyone had any experience eating the white parts (close to the rinds) vs the pink parts and if so have you noticed a difference? I'm interested in knowing what the sugar content of the white part/rind is compared to the pink flesh. The reason I ask is because I make pickled watermelon rinds as well (korean style) and would like to know nutrition facts.

I also suffered similar discomfort when I had watermelon recently. I just assumed that it was from the high fructose, because I also get a similar reaction when I eat other types of fruit. Just don't eat as much or suffer the discomfort when you eat. Sorry, not very helpful here.
