Celiac Disease - Where to Get Carbs?

I have celiac disease and I'm trying to gain weight. After my diagnosis I started losing too much. My blood tests indicate I wasn't severely deficient in any vitamins/minerals (except iron atm). My doctor thinks I may be losing weight because I'm not eating enough carbs. I am afraid of other grains and potatoes (I think potatoes set me back one night, I was in alot of pain after eating them). My only sources of carbs are fruit and veggies atm.

Where can I get a safe food with high carbs?

I'm 5'4 and 111 pounds now (I'm female). I was down to 108 at one point, from 111 in a few days after going gluten-free (found out I was celiac last Tuesday). It was kinda scary how fast I lost weight. I'm not even sure how much I want to weigh, I just don't wanna lose anymore. I just want to be a healthy weight for my height.

Maybe you need some digestive enzymes, bile and/or betaine HCL to assist your digestion!

can i ask what your height/weight is now? how much are you looking to gain? i'm just asking because i've gained weight without adding any starches.

Do you know where I can get safe beef? Whole Foods, Publix, Walmart, and Fresh Market are the closest to me.

That's great that the sweet potato was ok. If you can make it work while eating enough to regain some weight, I recommend going on an elimination diet. I did that a few months after I was diagnosed, and it really helped me get a clean slate and heal. I personally chose ground beef, sweet potatoes, and kale as my base (and soon added onions, garlic, and oranges). But also, it just took a long time for me to be able to eat without discomfort. Maybe about a year? Healing has definitely been a process. Also make sure you're not getting sneaky trace amounts of gluten.

Okay, sweet potatoes ans similar tubers like Taro might be your best bet then.

Thanks for the ideas. I'm trying to get fat too but I find that it's hard to digest and upsets my stomach.

I've heard about these kinds of diets like SCD and other leaky gut diets, but I also don't want to lose anymore weight. I feel like not eating carbs might be unhealthy for me right now.

I'm not sure and I'm hesitant to try any other ones. I did eat a sweet potato today which didn't cause any trouble.

If you want to avoid any grains and potatoes then plantains and yuka are the way to go. Safe starches that taste great.

Plantain, yucca, white potatoes (if nightshades are tolerated), sweet potatoes, beets, winter squashes, fruits... there are MANY gluten-free Paleo foods that can provide carbs!

I would also make sure you eat loads of healthy fats: coconut oil, ghee, butter (if tolerated), olive oil, homemade mayo (if egg yolks are tolerated), lard, duck fat... Careful with nuts and nut butter (adjust to personal tolerance).

Dairy might not be a good idea if you have celiac disease.

I get my carbs from a variety of starchy veggies: white potatoes, sweet potatoes, rutabagas, parsnips, turnips, beets, radishes, and winter squash.

I added back in some non-gluten grains: rice and idlis (fermented rice and lentils) both sit well with my digestive tract.

And for starchy fruit I eat bananas quite often.

i usually get all my carbs from fruits, greens, and veggies. no starches because i'm trying to heal my gut.
