I find myself having trouble getting enough calories. I know in the paleo community alot of calories typically come from fats. I have problems with my pancreas and a "high" fat diet causes me to get symptoms of pancreatitis.
I currently am eating enough carbs/protein and the little fat from lean meat and cooking oils to get about 1500 calories a day. But that's not enough for me, i'm very active and find I perform much better around 2,000. Even at 1,500 I find myself eating a very high volume of food since most things are low calorie. This is hopefully a temporary thing and eventually I'll be able to eat fats again.
But for now... any suggestions on extra calories without the fat?? More carbs would be nice.. I heavily load up on sweet potatoes but not much else.
