Are starches important?

I love Paleo, and have found so many amazing recipes that sometimes I go several days without starches (sweet potato). I still get fats, carbs (fruits/veggies), and protein. I also work out most days of the week. Is it safe to skip starches as long as I have carbs from fruits/veggies?

No, they are not important per se, but they come packaged with so much K, Mg, fermentable fiber, vitamin C that in practice they are a need. And there is no way to really get that stuff from meat and coconut.

I think it's fine to get carbs from fruits. At some point, you might want to reintroduce starchy foods, one at a time, to see whether the situation has changed. Most traditional cultures have starches and are healthy. But you may have gut issues that need to be resolved before you can do well with starches. And it may be that some starchy foods are a better fit for you than others.

Carbs are the only non-essential macronutrient (Fat and Protein are essential). If you're feeling good throughout the day only sourcing your carbs from fruits and veggies, awesome! Don't fix what's not broken. 

Two quick thoughts, though... 1) fruits have a TON of sugar. 2) caloric timing with startch carbs pre, post an even interworkout can really provide an added boost and help to restore glycogen. I personally use sweet potato powder.
