I'm trying to get up to 150-200g of net carbs per day (30% of calories ala PHD), but i'm struggling to get more than 120g, i usually have about a pound of white potatoes with my evening meal as i seem tolerate starch well, i don't seem to like fruit much so that's not an option. Any suggestions on other sources of carbs i could introduce? Ideally a tuber that has the micro's of white potatoes but more carbs? Thanks for any tips

Have you tried to go with rice? It's easy to make in a pan or you can invest in a rice maker (or an Instant Pot like I just got and love).
Also, buckwheat is the "least offensive grain" per PHD...I would put that in my smoothies when trying to put on some extra muscle (I know that whole sentence was basically un-paleo).
