anything containing grain is by definition NOT paleo, but if the grains were organic, heirloom, non-GMO, hand-ground, and sprouted, soaked, or fermented and you're getting plenty of physical activity, it's probably going be quite as harmful as SAD bread.

Sorry, no, it's still grains; while sprouted and while not all wheat, they are problematic, and still contain wheat and barley, both of which are gluten sources.
