Has anyone tried using avocado as a substitute for nut butters in baking with any success? We have salicylate allergies which includes all nuts and sunflower seeds . I am also after a good subby for almond flour also please .

thankyou ssooooooooooooo much , you have no idea how hard this has been trying to cook and bake (I agree , it is fun and I do lots to cater for a variety of diets under the same roof) healthy , allergy free , vegetarian and meat eaters ,lactose and dairy free meals and treats as cost effectively as possible . You have made my day , thankyou again :)

Yes, gooey ripe avocados are an excellent sub for nut butter, and easier to digest for most. Another workable alternative is skinned and mashed sweet potato with added cocooil or tahini if you can do sesame

My go to loaf recipe: 1/2 c Coconut Flour 1/2 c Ground Flax (sub sweet potato here) 1 t Salt 1 t Baking Soda 6 Eggs (add 4-5 if subbing sweet potato mash) 1/2 c Tahini (sub avocado here) 1/2 c Applesauce (sub banana, sweet potato here) Liberal fresh herbs, garlic, spices, and what have you

Bananas also work well but impart their strong flavor, not so nice for savoury projects. Plantains might be better because of the higher starch

Paleo baking (i know oxymoron, but baking is fun so spear me) is like all baking, it is experimental chemistry.

Play around, sweet potatoes and avos are helluva lot cheaper than almonds anyway : )
