Can you make ghee of spoiled butter

Hi all!

I've found some grass fed butter in the fridge and it is sour and a year passed the date.

I thought even if the proteins and lactose is spoiled, the saturated fat should be fine. When making ghee you separate the saturated fat from the spoiled ingredients.

Am I correct that the ghee from spoiled butter should be fine?

Except that some of the fats are actually PUFAs and MUFAs and those can and will go rancid and it will smell funky - not in a good way.  MUFAs can and do oxidize, but nowhere near as quickly as PUFAs.  There's like 3% PUFA in butter.

I just used butter that was slightly discolored and smelled funky. It made perfectly good ghee. It didn't smell right until it was finished cooking. When I poured into jars it was the right color and had the right taste. Hope this helps.
