Does anyone have dessert ideas that feature butter as one of the main ingredients? A tasty way to get some daily fat intake?

I just made this again and added a pinch of each cinnamon, chili powder and cayenne pepper. Delicious, and it got rave reviews.

The sweet potato in ramekins is really nice, kind of like pudding but tastes like pie :) You can even make the top pretty and put a dollop of whipped cream - coconut or dairy, and it's super yummo.

This sounds divine! What ratio of ground macadamias to butter do you use?

I've made something like this before and it is indeed fantastic! You could do something similar with sweet potato.

I don't, but questions like this are making me want to look into Julia Child cookbooks. Isn't she the one that said "if you're afraid of butter, use cream"? Sounds like my kind of lady. Bet she would probably have some good recipes that you could start with and Paleo-ize as necessary.

I make little cookies out of ground macadamia nuts and butter. I add a little vanilla, stevia, cinnamon and a pinch of salt but they probably taste good plain too. Just form into balls then press then refrigerate. Alternatively you can form into a log (wrap in plastic wrap and roll) then slice them. They do need to stay refrigerated or they fall apart. I also sometimes press them into candy molds but I'm thinking you probably don't want to go there, lol.

You could play around with different nuts and spices too. I once did pecans with some pumpkin pie spice and that was really good too.

The easiest is saute ripe banana in butter, let the butter get brown and rich - bananas toasty . You can do pretty much whatever you want with this. Add spices. Mix with mac nuts. Add coconut. Basically Banana's Foster :) You can pretty much do the same thing with pears, pineapple, etc. Make an almond meal crust and press into a tart pan and fill with any of these. Umm.. Roast sweet potato, whip, add brown melted butter, eggs, spices, butter and dust the inside of ramekins with nut meal, fill, and you've got little mini-pies. Make them bigger and a whole pie - swap out the nuts and the sweet potato for pumpkin.

I make my own ice cream so you could make something simple and fold any of these into it, like a swirl, or layer before freezing. So many options! Have fun :)

Flourless chocolate cake is basically butter, cocoa, sugar and eggs. Fairly Paleo, though with some sugar (I guess it is dessert). My favorite recipe comes from epicurious, just made it the other night.

Heavy cream is high in butterfat, not sure if you are looking for butter specifically or just high fat desserts. My favorite (almost only) desserts involve heavy cream, including home made ice cream, berries with cream (unsweetened and whipped or just poured), or a smoothie with cream and either berries or chocolate.

Papaya Custard -

papaya (I usually do 1/3 of the long papayas or 1/2 of the smaller ones)

2-3 eggs 1-2 tbsp raw unheated honey

2-3 tbsp butter

Blend it all together and pour into a glass. It will harden slightly after a few minutes and turn into a yummy custard.
