Hello Chanthru,

Anchor Butter is a good brand of butter. It is pasteurized, but not homogenized. Homogenization is a process that distributors apply to milk to break up the fat globules and disperse it throughout the milk in tiny particles to keep it from separating. I never drink homogenized milk.

Since butter is essentially milkfat, companies do not homogenize the whole milk when making butter.

Pasteurized butter is ok because virtually all of the proteins have been separated out. The pasteurization process does not harm the saturated fat, which is about 85% of butter.

Cheers,

JK
