Do any of you eat nopales (cactus)?

I have some in my backyard and my mom usually chops them up and boils them and serves them with lemon juice, tomato, and chopped onion. They seem to have a decent amount of calcium and are very tasty. Are there any drawbacks to cactus consumption? I never hear it being talked about much.

I saut?? them with scrambled eggs and mustard greens. Or add them to soup or stew. Yum!

They are said to be very good for diabetics- we eat them in Mexico. They grow in our backyard but are a bit prickly when you prepare them! I have been stabbed.

Yes, I have had them in mexican restaurants. They are sauteed in olive oil and salt, with a little mexican cheese. Delicious!
