I'm in no way a medical professional, but I would worry too much about cholesterol. There's more to it then cholesterol count when it comes to heart health. If your worried because your count is high from the start, try eating whatever is leftover from dinner the night before.

And what about cholesterol? I ask before I have a high count to start with, pre-Paleo....

Wild Salmon Fillet (i take out of my freezer every night before bed (costco))

Tbsp of Avocado,

Some Lettuce (spinach, romaine, any kind)

or a veggies (broccoli, asparagus, cauli,)

I only eat eggs really when I make pancakes!

I don't do breakfast anymore, but if I did it would be eggs, bacon, sardines, potatoes, kale, chard, spinach, carrots, zucchini, sweet potatoes, leftover meats or fish. Nothing better than a piece of salmon with runny eggs on top. Obviously just some of the above.

Who says eggs are a breakfast food? I find them to be a much better dinner food. How about fish, burgers, broccoli, potatoes, etc for breakfast? In fact, I have nothing more than a latte or espresso most days for breakfast.

I eat 4 egg scrambled with peppers, onions, tomato, and other veggies. I also throw an egg yolk and tbsp of butter in my coffee. So i average about 35 eggs a week.

Sausage, bacon, apples with coconut oil and cinnamon (warmed in microwave), flax cereal (ground flax, hemp seeds, almond butter, apple sauce, etc, warmed with almond milk), ham, kefir smoothies, smoothies of all kinds. Also, I think it is a great idea to get over the idea of what breakfast should be and instead focus on healthy meals--this morning I'm having ground beef (made a batch ahead of time and froze in individual containers), sweet potato (made ahead), butter on that and bulletproof coffee.

You're afraid of eggs? I just need to know if you're afraid because you're worried about the cholesterol or you're sensitive to eggs in general or worried you'll tire of them.

I eat on average 20-25 eggs a week...but it's only yolks.

I make a bacon sandwich of sorts...I make my bacon in the oven so that the strips stay flat, about 4-5 at a time, slightly on top of each other, then a space and 4-5 more strips. it gives me the right shape and size to use the bacon as "bread slices". Throw on some sour cream for "colour" and a side coffee...that's breakfast!

If your eggs are pastured then I wouldn't worry about too many eggs. I eat 2-3 most mornings & I'm sure there are folk on here that eat a lot more. As for other stuff just Google paleo breakfast ideas. I sometimes eat cold cut meats, leftovers(including curry), bacon, cheese, nuts. The idea is to just treat it like another meal rather than. .oh it's breakfast so I need something breakfasty. Welcome to paleo, you have made a great decision.
