I have an IGe allgery to beef so using a beef based bone broth won't work for me. Can I use pork and chicken as a substitute?

Absolutely.  Any kinds of bones will work as long as it creates a gelatin.

Chicken, lamb, pork, goat, lamb, etc. even fish and shellfish, if you can tolerate the smell.
