Extreme Bloating

I have been Paleo for 2 years and had great Success. Paleo for me means:

No Dairy

No Legumes

No Grains / White Flour

No Un-Natural Sugars

I have had great success in terms of weigh loss and significant decrease in Cholesterol.

My mother is starting to follow the same diet - she knows she has a sensitivity to Gluten however, she has thus since cut Gluten out of her diet and all other grains.

She notices that after eating her stomach gets very bloated, you can literally watch it for 20 minutes and see it get bloated as if she is not digesting her food or something.

Any suggestions on how to find out what's going on??

BTW - SHe has had her Gall Bladder removed a few years back.

Great question. I would imagine the source would be something to do with fermentation of carbohydrates in the gut giving off gas that causes bloating. What it actually is, I really don't know. I'm wondering if perhaps she is running into issues with her gut biome. I'm not an expert so I'm not telling you what to go out and do, but I'm just suggesting this as a starting point for further research. Does she eat unpasteurized fermented foods? For example, pickles, sauerkraut, kimchi, etc.
