Give us an idea of where you're starting from. Do you eat a lot of processed foods? Do you rely on bread and pasta a lot? How do you feel about vegetables? Do you eat fish? Meat? Also, why do you want to do this? Weight loss? Athletic performance? Medical issues?
As far as dealing with all of the information, I'd recommend that you just choose one book and read it and follow what that book says. As far as books go, I like Mark Sisson's Primal Blueprint or Sarah Fragoso's Everyday Paleo for beginners (FYI--Mark allows some full-fat dairy). You could also, depending on how strict you want to be, start with one of the super-strict but short-term diets like the Whole 30 or the 21-day Sugar Detox. But, as I said, pick one thing, learn from it, and only when you think you really know what that one source is saying, decide where to go from there.
