Question About My Raw Ground Beef

I haven't eaten meat in years. I've been veg and vegan until last month.

I've been buying organic ground beef once and awhile, today when I started breaking up the raw meat in the pan, the outside all bright red/purpley/pink like all the raw meat looks, but inside it's brown.

What's up with that? Is it going bad? Is it partially cooked?? Sorry if this is ridiculous, but I'm just clueless about meat!

Ewww that's gross. And dishonest on the part of the meat department at the grocery store :(

sometimes it's just the myoglobin (or hemoglobin.. i forget which) that has ran out of the meat (the substance that carries oxygen around the tissues etc iirc)... doesn't mean its bad... if it doesn't smell very "off" or doesn't have a slimey covering it's likely fine/good to eat even if grey/brown

Probably was gassed with CO to keep it pretty and pink. Nothing harmful about it, but generally used to pass off old meat for fresh.
