I bought sous-vide beef recently, but it was quite a lot, so I had to eat half of it a day after opening the package. The beef had some blue-grey discoloration though. Nothing special, I see that all the time on beef, but what exactly does that mean? I'm sure it can't be really bad, I ate it and felt normal after all.
I also see that blue-grey color when I cut beef in half and look at the sides of each half. I might need to update this with a picture, but I don't have any good example at home right now.
