Turning an oriental BBQ salad paleo -what can I sub for the crunchy ramen noodles?

The recipe uses the ramen noodles uncooked, crumbled up for crunch. What can I substitute? Looking for something very similar, it already has seeds. Could I do something with rice noodles? Besides frying

Yes I'm substituting everything to be paleo but I would like a substitute for ramen noodles.

You could just skip it.  You could use celery or carrots.  But one thing to be weary of, if this is an oriental salad, does it include things like soy sauce or the like, if so you'll absolutely want to skip that, or at least substitute it for coconut aminos.
