Paleo Baked Goods

What are your feelings on Paleo baked goods? Meaning using either coconut flour or almond flour and all other paleo approved ingredients. Some say stay away others say go for it. I am thinking about trying a paleo bread recipe.

If you like it and tolerate it, go for it. Most folks can eat corn without issue.

Masa is indeed corn, and not paleo, but hardly a neolithic scourge on humanity. It is traditionally prepared corn, nixtamalized.

Toss in an egg and it's a johnnycake. Toss in some cheese and it's like grilled cheese.

I've had luck with brown rice flour... not something I would eat daily but great for an occasional treat!

Go ahead and try it! It's not like you'll be eating baked goods every day, so make your recipe and enjoy it as a treat.

Every once in a great while, Paleo baked goods are ice to have. Not daily or even weekly.

i love paleo baked goods. it's so fun to come up with new recipes and combinations. i don't add any weird ingredients so i don't see a problem with coconut flour/almond flour, coconut oil, flax meal, and fruit.

I went a long time without paleo baked goods. Now, sometimes I make them. It's really no big deal either way, as long as I'm not in the habit of replacing a standard muffin with a paleo muffin and calling it breakfast. I will say that going a while without baked goods has really lowered my sugar tolerance and now if I make muffins or quick breads I'm fine using 1/2 the honey I used to use.

Fat bread aka paleo quick bread is awesome stuff. Works as pancakes as well.

I consume masa harina as well, tortillas, arepas... yum! Johnnycakes too.

If you do go for it, check out some of the recipes on http://www.againstallgrain.com/ - I've tried a few recipes on there that I really enjoyed.

The fat bread that celticcavegirl mentioned is amazing! I've made it a few times, and it's really hard not to eat the whole thing in one sitting...but little cost prohibitive for me to make very frequently, since it's with macadamia nuts. Ate about a half stick of butter that day, though. Haha..

I think they're gross. I've tried muffins a couple of times and pancakes once....they taste so heavy and rich because of all the almond or coconut flour. Blech. I'd give it a try though if you were interested. I just don't think it's worth the effort.

Tried it once - "paleo" brownies - looked fine, but tasted so foul, I wont bother again! Aside from that, I don't consider almond flour paleo. Lots of oxidised PUFA. Personally, I think it's less harmful to use a gluten-free flour blend (which is simply starch). Better still to just forget about baked goods altogether!

Having said that, free the animal has a "fat bread" recipe you might like to look for.
