saw something in Loren Cordains book re: bacon

it seems that in the Paleo Diet book Cordain suggests that we stay away from butter and bacon...is this true? I was under the impression that bacon was good and butter from grass fed beef was good as well..can someone please clarify for me. Thanks

You can't raise your cholesterol from your diet, that's a complete lie. At most you get 0.5g of unesterified cholesterol from your diet (esterified cholesterol is not absorbed). And yes, that's a fine meal. Also cholesterol is beneficial, every cell in your body can make it and use it, and its levels are very tightly regulated and are actually part of your immune system. If your cholesterol goes up significantly, you likely have damage that's being repaired, or an infection.

Okay, just got the new book, back to the drawing board...so let me ask this....I just had chicken breasts with string beans...I melted 2 or 3 tablespoons of kerrygold butter and poured over both.....is that good for me? will this raise my cholesterol? Thanks, Jim

That's a very old book, and quite out of date. Dr. Cordain has changed his stance on saturated fat since. Paleo Answer is his newer book.

That said, neither CAFO bacon, nor CAFO butter should ideally be used, rather you'd want pastured bacon (usually without a sugar cure, just smoked), and butter from grassfed cows, such as Kerrygold.
