To probably order online since I cannot find it in stores. Any recommendations?

Also another quick question: Why uncured bacon?

I buy uncured bacon because, although it does have nitrites, they are naturally occurring nitrites found in vegetables like celery (which is the vegetable used in the "uncured" brands). Rather than buy brands that use mystery chemicals, I prefer to buy those that just use salt and celery juice. Doesn't hurt to request a product. Contact your local grocer and let them know you will buy it (and lots).

you might check slankers, they carry meats of all types. www.slankersgrassfedmeats.com/
