Is it safe to eat copious amounts of bacon? What about the sodium?

If you are going to parody paleo at least mention elixirs like coconut oil as well. If you really think most people who eat 'paleo', whole foods or whatever are fat/have high bp, chol, don't care if they die - all that I can do is LOL. Nice try, but unless you're a complete numpty (well...), you should be able to do better than that...

Raw kale juice has a lot of goitrogens, you might not want to eat only bacon and kale juice.

Supposed strikes against it is it's omega-6, sodium, and nitrosamines, but these are probably not in the amounts worth worrying about unless bacon is all you eat.

So yes, i'd say it's safe.

I eat bacon pretty often; 4-6 strips several times a week. I'm not worried about the sodium content since I have low blood pressure and I use salt very liberally on my food. I try to buy organic when I can (such as Applegate Farms or Wellshire Farms). If not, the only thing I look out for is if it's uncured, whether it contains nitrates/nitrites, how much sugar it has, and if there are any added spices. I stick to my general rule of thumb: the fewer ingredients, the better. When I buy bacon, I try to stick with the only ingredients listed as: pork, water, sugar/cane juice, and salt. I don't know how much a "copious amount" of bacon is, but I'm sure you know better than to eat, say, a pound of bacon every day.

The main problem with bacon is the same as with all other smoked foods, the PAH http://en.wikipedia.org/wiki/Polycyclic_aromatic_hydrocarbon

Is it safe? As with most cured/processed foods the question should rather be: how much of it is safe

I eat about 2-3 pounds of bacon a day!! I love it. I buy straight from the farm. I have high blood pressure, high bad cholesterol and I am fat. I eat only bacon and kale juice. I am paleo. I don't care if I die. I love bacon and will never stop eating it.
