Pork belly is paleo. Curing meat is traditional. So I supposed it is paleo.

But just being "paleo" doesn't mean it's healthy to eat everyday.

I consider 'traditional' bacon paleo/primal, since meats have been cured for preservation since ancient times. Nitrates are naturally found in some sea salts and many veggies like celery (see Chris Kresser's article and here)), and smoking was another technique (source).

The catch is that it's difficult to find bacon and cured meats without tons of other additives. I eat them occasionally when I can find products that don't contain sodium phosphates and too many other ingredients.

I'm not sure if bacon is "really paleo", but bacon really is Paleo.
