It really depends on how you treat it. Are you going to smoke it or roast it before storing? When I buy "uncured" bacon, I use it within a few days. After that, the color and odor change slightly and I'm just not comfortable with it.
I do have a pork belly in my fridge that I am going to begin turning into bacon tonight, so I'll definitely know more in a week or two!
