Shelf life of bacon grease?

I just made bacon today. How long can I keep it in the fridge for use?

You can burn it as an oil lamp buts its very smoky so it's an out door one.

Bacteria is not the concern with bacon fat, oxidation is. To reduce the rate of oxidation, you want to keep the fat out of light and air. The refrigerator makes a great spot to put it for this reason.

You need a dark (opaque) air-tight container. They actually make items specifically for this. I have a ceramic jar that has a strainer attachment, I just dump the fat in, it strains out the bits and then I screw on the lid and put it in my fridge.

If you are like me, then you will use that fat long before it goes rancid!

Just keep it in the fridge.

You'll be able to tell if it goes bad. It starts to smell like polyurethane. I've got some I need to toss. I left it on the back of the stove, which allowed it to be repeatedly heated and cooled as I made other things. From now on, I'm keeping it in the fridge.

I wonder if I could burn the stuff, like in an oil lamp?

I just keep mine in a jar on the counter. If you use it frequently, it won't go bad fast enough. If you're only going to use it occasionally, then place it in the fridge and it should stay good for a very long time.
