Ideas for snacks/quick meals in first few days after new baby?

Hello Paleo friends! I was wondering if you could recommend some snacks and quick meals (and perhaps also some pantry essentials!) for our family. I will be having my third baby sometime in the upcoming month and plan on nursing him. We're all eating Paleo in the family now and my initial plan was to cook and freeze meals for a week or so but I'm quickly realizing we just don't have the room for it in our already well-stocked freezer. So my husband plans on cooking dinners if I cannot, but I would like to have all the essentials plus some snacks to be prepared. I have two other kids aged four and two as well. Any ideas/suggestions are welcome! Thank you!

Ground beef is my favorite go-to meal; love it with some avocado on the side. We don't do dairy, but I do love prosciutto. I might have to go to Whole Foods to get it because the last time I tried a random brand from somewhere else the chemical taste was just overwhelming. Blech! Great suggestions, though. Thank you! I just made a batch of these very lactation cookies today!!!! They're super addictive!!! :D

Wow, I assumed lactation cookies were not for me. I will look for these.

I keep a crudite platter with cheese, olives and sausages handy. Also tuna, chicken, eggs and mayo for the respective salads. But the most important things i make in big batches are deviled eggs. All kinds of variations. I often can't cook because of the baby, so being able to slam down a few deviled eggs makes all the difference.

Ground beef fries up nicely, even if someone forgets to thaw it before hand. Add tomato paste, water to thin, sauteed onion & garlic, salt, pepper, cumin, chili powder, and/or whatever spices you like in your taco meat. Serve with cut up veggies and lettuce for a quick taco night.

Keep cold cuts, fresh veggies, and cheeses if you do dairy on hand. These can be made ahead and either eaten cold or reheated: http://nomnompaleo.com/post/7486819479/prosciutto-wrapped-mini-frittata-muffins They can be made without the meat "cups." Make sure you lube the muffin tin REALLY well. If you think there is enough, add more!

the paleo parents have a FAB post on paleo lactation cookies! bring some to the hospital (and let nutrition there know about your dietary requirements!)
