Like I want to make this dish that uses 3 avocados but I don't think they will all get ripe at the same time. so can I slice and freeze the one that ripens first? Is there any fruits or veggies that don't freeze well, especially if prepared a certain way? Before I was on this diet I didn't cook lol so I really don't know about this kind of stuff =]

You sure can freeze avocado but the texture won't be the same. Nutritionally it will be though so you can make smoothies, dressings, spreads etc no problem.
There are two ways you can do it, either halved or pureed. Here's how it's done:
- Wash the avocado, skin still on.
- Cut the fruit in half, and peel.
- If you are opting to keep them as halves, put them in a Ziploc bag and freeze. If you're pureeing, either mash the avocados with a fork or in a food processor with a little bit of lime or lemon. Store in a resealable bag and freeze. It's a good idea to put indentations in the bag to make for easy portion sizes later.
- When ready to use the avocados, place the frozen plastic bag in the refrigerator for around 24 hours to thaw or place in a bowl and run cool water over the baggie until thawed.
I always stock up when they are on sale and in season -- much cheaper that way :)
