Avocado as a sauce thickener?

Is this possible, particularly for a paleo tomato/spaghetti sauce? I'd really like to avoid using cream or any kind of (alternative) flour, if possible.

As a seasoned cook my nose wrinkled. Try some arrowroot instead.

Absolutely! It does make sauces/soups creamy and thickens them up. PLUS you're getting the added fat in :) You could also try coconut flour if you didn't want to use avocado.

I use avocado in some salad dressings to make them "creamy" and dairy free, but it's a cold application. Might work, but I'm thinking the heat might make it melty enough that it could take a lot of avocado to notice a difference. Worth a try if you really want to, though. Your sauce should reduce when simmered.

I don't know what kind of flavor it would impart on the sauce. I thicken mine by simmering it for a while.

Avocado thickens well not necessarily because of the fiber, but rather the fat. Chuck an avocado into a runny smoothie in the vita-mix and that thing could choke up into pudding. Emulsification FTW.

However, for a tomato sauce you don't really want it to be pureed.... do you?

It should work. I use it to thicken my smoothies.
