When my partner was in her mid-20s she developed thyroid cancer and had it removed. She's on the typical Synthroid meds. In her early 30s she had to have a "spot" removed from her lower leg. Turned out to be melanoma. She's a pale Irish lass. No further action was taken. For the past year she's had a rash on her hand. It comes and goes, but if I had to guess I'd say it was eczema. A few weeks ago she went to the doctor because she had a full body rash. Doc shrugged and gave her a lotion that cleared it up. She also gave her a very strong cream to put on her hand. It clears it up but she has to keep applying it.
What the heck is going on? I feel like the doctors should be testing her for autoimmune problems, but they're not. She's not really big into food, but she does eat some bread and likes her beer. She pretty much eats what I make, but then subs in some of her own stuff too. I'm sure Paleo would be great for her, but she's thin and kind of relates it to being a way to eat to control blood sugar because that's what I do. She'd have to be really, really convinced to give up her beer.

Dropping vegetable oils, eliminating gluten and reducing sugar will help her, even if she won't go full Paleo.
Chances are her Vitamin D levels are very low. Please encourage her to get her 25(OH)D level tested and sun or supplement to the high end of sufficiency (50-80 ng/ml.)
