I live in Spain and most supermarkets have them both, usually in jars. However when you order a mixed salad in a restaurant, they will invariably use the white asparagus. I don't think they even carry the green variety.

Green - the white stuff is "made" by preventing it from getting sunlight: http://stephaniesuesansmith.com/growing-white-asparagus/

It's white because it lacks chlorophyll. I don't know why anyone would want to eat a plant that has less nutrients, even if it is considered a delicacy or is more expensive.

Raydawg is right. White asparagus typically has a third of the nutrients of green asparagus. It also has a much milder taste. So if you hate the taste of asparagus, then maybe....

But for me, fewer nutrients, less taste, and twice the cost ---- That does not add up.

Taste rules and I find green asparagus has a stronger taste. Plus it's less work to peel it.

I tried white asparagus last week and hated it. It's so unnatural and creepy looking. I don't even know why I bought it...morbid curiosity maybe?

I've still never tried the white asparagus. I'll probably try it at some point, but right now I don't see the point.
