What are bad almonds?

I would roughly estimate that 1 out of every 50 almonds that I encounter is "bad." By this I mean that when I first bite into one, my mouth is immediately assaulted by a strong chemical taste, like amaretto gone wrong. The degree of badness differs greatly, with some being so bad as to be unswallowable, with others just leaving a mild aftertaste. But the particular bad flavor is always the same.

I'm curious if someone can explain what has happened to these almonds, and how safe they are to eat?

I usually try to spit them out, but sometimes that isn't convenient and I swallow them. On some of the more powerful ones, my windpipe involuntarily constricts, as if I were having an asthma attack. I used to have mild asthma, but have had 0 symptoms (other than almond induced) for 15 years.

I've encountered this with both raw and steamed almonds before, and can't tell that the culprits look any different from their standard brethren.

I think what wstrong's referring to is different from the usual old almond rancid oil taste.

I don't think that the particular taste that I'm talking about is mold. At least it tastes nothing like the taste of mold from e.g. moldy cheese. It tastes more like alcohol.

I think this is where the nuts oxidise and go rancid -keeping them in the freezer is supposed to reduce this!

Don't eat the rancid ones!

like suz said, they've oxidized and the oils have gone rancid. broken or chipped nuts oxidize faster, so watch out for those, and avoid wrinkly ones, too. I'm pretty sensitive to rancid nuts (hehehe), so I usually just stick to dry-roasted.

I've eaten a LOT of almonds and had never previously encountered this.

Last night I accidentally left my bag (containing my almonds) outside in the cold / wet overnight. I hate to waste food, so naturally I assumed they were still good! I was wrong - they taste just as you describe ("Amaretto gone wrong").

Yuck.

I always keep mine in the refrigerator until I soak and dry them and then they go right back into a sealed mason jar in the refrigerator again. I've never had any bad ever, I wonder if you are buying them where they are already going bad??

I know this was asked like forever ago, but that taste is maybe due to the bitter taste of amygdalin, which is an ingredient in truly raw almonds, also known as B17. If you've ever had raw apricot seeds, you'll know what I'm talking about.
