Multiple Questions About Water Only (For Hair)

A few months ago, I read about the water only hair rinsing method. At the time, I wasn't interested enough to try it, but a week ago, I decided to try it.  My main motive was to see if it helped my psoriasis, or what I thought was psoriasis. Essentially, I have a rash on my scalp that hurts more with shampoo use and seems to be getting worse, and is most likely related to my eczema.

So far, I've noticed positive things with switching, but only with my hair, not scalp. My hair's texture is more manageable, my ends are healthier, my hair's shiny, etc. However, I can't tell if it's helping the rashes or worsening them.

The main questions I have are as follows (sorry for taking so long to get to them). Does having a rash that scabs on my scalp make my scalp "think" it's dry, so it produces more sebum, making my scalp greasy, therefore making the adjustment period longer? Also, has anyone had dandruff caused by going water only? Before, I had slight dandruff, just around where the rash was bad, but now it's my whole scalp, so are there any simple ways to remove it?
